Raw energy bar nom nom nom

I had planned on sharing some art, but instead this post will be on yet another recipe from my friend Tiffany ♥  I made a couple changes to the recipe, but ill give you both versions.

Raw Energy Bars

Ingredients
1 1/2 cups mixed nuts and seeds; I used almonds, pecans, pistachios, pumpkin and sunflower seeds
3/4 cup Medjool dates
2 T virgin coconut oil
1/2 cup raw cocoa nibs
1/4 cup dried cranberries
1 T Maca powder
1 t Spirulina powder
1 T raw honey honey
1 T bee pollen
1 T beet powder
1/4 t pink Himalayan salt

Method
1. Blitz the seeds and nuts in food processor until you have a chunky nut meal.
2. Add all the other ingredients and blitz until everything is mixed together.
3. Firmly press into 6x6" pan and place in the fridge.
4. Once its firm, cut into whatever shape you want! I made little cubes for Sebastian - he called it his "Angry Bird food"!

Tiffany’s version

Use a mixed of cashews, almonds and pumpkin seeds and goji berries instead of cranberries. Leave out the beet powder and bee pollen. She also processes her dates with 1/4 cup of water until she has a smooth paste and then adds all the other ingredients. She also stores them in the freezer.

I also want to give a little shout out to Rebel:T/L/C's who makes wonderful fitted food safe covers so you don’t need to use plastic wrap! Ive been using their covers for a couple years now and have never had any problems with them! Whatever im making stays fresh on the counter or in the fridge and they stand up so well to being washed over and over again. Some info from their FB page: “TLCs are lined with a food-safe polyurethane-coated ripstop nylon which is water-resistant, mildew-resistant, abrasion-resistant, rot-resistant, and is free of heavy metals, phthalates, PBBs, and PBDEs. The coated side of the nylon faces away from food.”
